sweet (potato and black-eyed) pea salad
i have been inspired by the warmer weather to make up more served-cold dishes...
this one is so yummy i don't want to forget it!
lightly toss simmered-just-tender sweet potatoes and black eyed peas
in a dressing of lime juice, olive oil, garlic, salt, pepper, fresh sage and garlic chives.
chill overnight.
sprinkle with finely diced red onion, and serve with a crusty loaf!
(drizzle a little extra olive oil to serve, if desired...)
